Recipe of the Month: Creamy Summer Salad

Creamy summer saladSalad Ingredients

  • 3 cups broccoli florets, chopped into small pieces
  • 3 cups cauliflower florets, chopped into small pieces
  • 1 to 2 cups carrots, shredded or sliced
  • 15 oz sweet corn (fresh or canned)
  • ½ cup red onion, diced
  • 10 slices of cooked bacon, chopped
  • 1 cup cheddar cheese, shredded

Dressing Ingredients (2 Options)

Ranch Dressing

  • ½ cup mayo
  • ½ cup sour cream or Greek yogurt
  • 2 tablespoons dry ranch mix or more, to taste
  1. In a medium bowl, combine mayo and sour cream (or kefir or Greek yogurt) and add 1 or 2 tablespoons of dry ranch mix. Mix well and taste to see if you need to add more dry ranch mix to the dressing.

Dressing Without Ranch

  • ½ cup mayonnaise
  • ½ cup sour cream or Greek yogurt
  • 2 tablespoons lemon juice
  • ¼ cup honey, warmed up
  • ¼ teaspoon salt (optional)
  1. In a small bowl, stir together mayonnaise, sour cream or Greek yogurt, lemon juice, honey, and salt.

Note: Warm up the honey so it mixes easily. Lightly mix the ingredients until well combined and smooth. Salt and pepper if desired.


  1. In a large bowl, combine and stir together all salad ingredients.
  2. Slowly add in your dressing choice.

Salad Dressing option 2 (without Ranch):

  1. Gradually add and mix the salad dressing of your choice to the large bowl of salad ingredients. Stir until all the ingredients are covered with dressing.
