Peanut Butter Chocolate Chip Banana Bread 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar or use half brown sugar for extra flavor
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 ripe bananas, mashed
- 1/4 cup sour cream or Greek yogurt
- 1/4 cup creamy peanut butter
- 1 cup chocolate chips (semi-sweet or milk chocolate)
Instructions
- Preheat your oven to 350 degrees. Grease a 9×5-inch loaf pan or line it with parchment paper. (86541000)
- In a medium bowl, mix together the flour, baking soda, salt, and ground cinnamon. Set aside.
- In a large bowl, mix the melted butter and sugar until smooth. Add the eggs, vanilla, and peanut butter until combined.
- Mash the bananas in a separate bowl until smooth. Stir the mashed bananas and sour cream or Greek yogurt into the large bowl of ingredients.
- Gradually fold the dry (medium bowl) ingredients into the large bowl of ingredients until all ingredients are combined. Do not overmix the batter.
- Gently add chocolate chips, reserving a handful to sprinkle on top if desired.
- Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the reserved chocolate chips on top for extra chocolate goodness. Bake in the preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached. If the top starts to brown too quickly, you can tent the loaf with aluminum foil for the last 15-20 minutes of baking.
