Salad Ingredients
- 3 cups broccoli florets, chopped into small pieces
- 3 cups cauliflower florets, chopped into small pieces
- 1 to 2 cups carrots, shredded or sliced
- 15 oz sweet corn (fresh or canned)
- ½ cup red onion, diced
- 10 slices of cooked bacon, chopped
- 1 cup cheddar cheese, shredded
Dressing Ingredients (2 Options)
Ranch Dressing
- ½ cup mayo
- ½ cup sour cream or Greek yogurt
- 2 tablespoons dry ranch mix or more, to taste
- In a medium bowl, combine mayo and sour cream (or kefir or Greek yogurt) and add 1 or 2 tablespoons of dry ranch mix. Mix well and taste to see if you need to add more dry ranch mix to the dressing.
Dressing Without Ranch
- ½ cup mayonnaise
- ½ cup sour cream or Greek yogurt
- 2 tablespoons lemon juice
- ¼ cup honey, warmed up
- ¼ teaspoon salt (optional)
- In a small bowl, stir together mayonnaise, sour cream or Greek yogurt, lemon juice, honey, and salt.
Note: Warm up the honey so it mixes easily. Lightly mix the ingredients until well combined and smooth. Salt and pepper if desired.
Instructions
- In a large bowl, combine and stir together all salad ingredients.
- Slowly add in your dressing choice.
Salad Dressing option 2 (without Ranch):
- Gradually add and mix the salad dressing of your choice to the large bowl of salad ingredients. Stir until all the ingredients are covered with dressing.
