Recipe of the Month: Breakfast Bagel Sliders

Ingredients

  • 8 eggs
  • ¼ c. milk
  • 8 slices bacon
  • salt (84489000)
  • ground black pepper
  • 10 mini “everything flavored bagels” halved
  • 4 tablespoons cream cheese, softened (optional)
  • 1 1/2 c. shredded cheddar cheese

Instructions

  1. Preheat oven to 350° and grease a large baking dish with cooking spray. In a large bowl, beat eggs and milk until light and fluffy. Set aside.
  2. In a large skillet over medium heat, cook bacon until crispy. Remove slices from the pan to drain on paper towels. Pour out most of the bacon fat but leave about 1 tablespoon in the skillet.
  3. Pour egg mixture in skillet then immediately turn down heat to medium-low. Stir occasionally. When the eggs are nearly set, season with salt and pepper. Remove from heat.
  4. Spread cream cheese onto the bottom halves of the bagels, (this is optional) then place in a greased baking dish, side by side. Spread egg mixture over bagels then crumble cooked bacon on top. Sprinkle with cheddar then add the bagel tops.
  5. Bake for 7 to 10 minutes until the bagels are toasty and the cheese has melted. Serve warm.

Notes

Substitute other bagel flavors, and meats of choice or serve plain. Serve with fruit or favorite breakfast sides.
